What you’ll need

Ingredients

  • 2 slices wholegrain toast
  • 220 g egg whites
  • 1 large apple (180–200 g)
  • 1–1½ tsp cinnamon
  • ½ tsp vanilla
  • sweetener to taste (optional)
  • 1 pinch salt
  • sugar-free syrup for serving (optional)

Step by step

Method

  1. Dice or thinly slice the apple.

  2. Add the apple to a non-stick pan with cinnamon, sweetener and a small splash of water. Cook gently until soft and warm, with an almost apple-pie-like texture.

  3. Whisk together the egg whites, cinnamon, vanilla, sweetener and a small pinch of salt.

  4. Soak the bread well in the egg mixture so it absorbs plenty of liquid.

  5. Cook the soaked bread on a non-stick pan over medium heat until golden on both sides and cooked through.

  6. Serve the French toast with the warm cinnamon apples.

  7. Finish with extra cinnamon and optional sugar-free syrup.

Make it your own

More cosy

Add a little cardamom alongside the cinnamon.

More volume

Add extra apple or berries.

More creamy

Optionally add skyr or low-fat Greek yogurt on top for extra creaminess and protein.

More indulgent

Add a small amount of peanut butter or chopped nuts.
