What you’ll need
Ingredients
- 2 slices wholegrain toast
- 220 g egg whites
- 1 large apple (180–200 g)
- 1–1½ tsp cinnamon
- ½ tsp vanilla
- sweetener to taste (optional)
- 1 pinch salt
- sugar-free syrup for serving (optional)
Step by step
Method
Dice or thinly slice the apple.
Add the apple to a non-stick pan with cinnamon, sweetener and a small splash of water. Cook gently until soft and warm, with an almost apple-pie-like texture.
Whisk together the egg whites, cinnamon, vanilla, sweetener and a small pinch of salt.
Soak the bread well in the egg mixture so it absorbs plenty of liquid.
Cook the soaked bread on a non-stick pan over medium heat until golden on both sides and cooked through.
Serve the French toast with the warm cinnamon apples.
Finish with extra cinnamon and optional sugar-free syrup.
